Back to School Dinner Made Easy

When you get home from a long day of work and/or chauffeuring the kids between school and activities, the last thing you want to do is labor over dinner. The last meal of the day should be a time to gather the family together to discuss the day, not stress about what to cook.

Winding down with a satisfying, healthy supper is important not only for the kids, but for parents as well. We’ve compiled a few recipes that can be assembled quickly, and still leave enough time to catch your favorite TV show.

Slow Cooker Fresh Veggie LasagnaThe crockpot is quite possibly the best invention for busy weeknights. Just assemble the ingredients in advance, let cook for 4-5 hours during the day, and come home to a mouthwatering aroma and a hot meal. Kids will love eating veggies when baked into a gooey lasagna. Chicken FajitasThis classic Mexican dish is a delicious time-saver. Chicken can be sauteed quickly, or substitute the meat from Mollie’s Flame Roasted Rotisserie Chicken. Set up tortillas, chicken, veggies, cheese, guacamole and sour cream. Each person can then assemble their own fajita and add whatever they like. How easy is that?
