Irish Coffee

Since St. Patrick’s Day is on a Saturday this year, why not start your morning with an Irish Coffee.   Irish Coffee was invented back in 1939 by Joe Sheridan.

Here’s how to make it:


 1 shot of your favorite Irish Whiskey.

If your favorite happens to be a very expensive single malt then by all means,  pour away.  If you don’t have any Irish Whiskey at home (and yes you must use Irish Whiskey here),  we recommend Tullamore Dew. It’s a favorite among Irish whiskeys for its distinctive, accessible taste.

 

 

 

 

 

 Hot coffee.

Like whiskey, everyone has a favorite coffee.  We won’t even get started here on which coffee to use, just make sure it’s of a good quality.  If you like it strong, make an espresso or brew a good dark roast.  If you you like it lighter, perhaps just wave some coffee beans over a glass of hot water.

 

 

 

 

 Heavy cream.

Lightly whip the cream in a blender to a count of 12.  Pour over the back of a spoon to float on top of the coffee.  The cream on top keeps your coffee warm.

 

 

 

 

 

And of course, no cocktail is complete without a toast.  In honor of St. Patrick’s Day, here are a couple of Irish toasts:

“May the luck of the Irish
Lead to happiest heights
And the highway you travel
Be lined with green lights.
Wherever you go and whatever you do,
May the luck of the Irish be there with you.”

A Fresh Start to 2018 with Earthbound Farm!

This week, we’re featuring one of our favorite Earthbound Farm recipes: Creamed Parmesan Power Greens!

Creamed Parmesan Power Greens
Prep time: 5 • Cook time: 10
Yields: 4 Servings

Rich and creamy power greens, blended with Parmesan cheese and a hint of nutmeg, will have your guests asking for seconds. It’s a delicious side dish with beef, pork, chicken or fish, and quick and easy to make.

Not a fan of creamed spinach? We’re not worried. This quick and comforting delight will make doubters think again and aficionados clamor for more.

Adapted from a recipe from Food to Live By: The Earthbound Farm Organic Cookbook by Myra Goodman

Steam the power greens in a steamer basket over boiling water until it wilts, about 1 minute.  Transfer the greens to a colander to drain and let cool.  Squeeze out any remaining water in the greens using your hands or wrap the greens in a dishcloth and squeeze.

Melt butter in a large skillet over medium-low heat.  Add the flour and cook for two minutes, whisking constantly.  Add the milk and cream in a steady stream, continuing to whisk, and cook until the cream sauce thickens, another 2 minutes.

Add the power greens to the cream sauce and stir to combine.  Stir in the Parmesan cheese, nutmeg and cook until the greens are heated through, about 1 minute.  Season with salt and pepper to taste.  If you are using breadcrumbs, place breadcrumbs in a small skillet and toast until golden brown.  Remove from heat and sprinkle toasted breadcrumbs on top of dish.  Serve hot.

Cook’s Note:  Steam the greens until they wilt — be careful not to overcook!
