Earth Month: Power Up with Power Greens!

Earth Day is coming up on Wednesday, April 22, so Mollie Stone’s and Earthbound Farm are teaming up to celebrate the entire month!

Like Mollie Stone’s, Earthbound is committed to reducing its impact on the planet. In 2015 alone, Earthbound’s organic farming operations on nearly 50,000 acres will keep over 16 million pounds of synthetic fertilizers and toxic pesticides out of the environment.

Power up for Earth Day with Earthbound Farm Organic Power Greens. Power Greens are a super versatile, easy mix of tender baby spinach, baby red and green chards, and baby kales. They’re ready for salads, smoothies and recipes – no washing or de-stemming needed. Keep reading for two recipes using this tasty organic mix.

POWER GREENS SMOOTHIE
From Earthbound Farm

INGREDIENTS

  • 2 oz Earthbound Farm Organic Power Greens (about 3 cups packed)
  • 3 oz frozen strawberries
  • 4 oz frozen blueberries
  • 10 oz apple juice

DIRECTIONS

Place all ingredients in a blender and blend until smooth. Enjoy!

SAUTÉED POWER GREENS WITH CORN & MUSHROOMS
From Earthbound Farm
Serves 6

INGREDIENTS

  • 5 tablespoons olive oil
  • 1 tablespoon finely minced garlic
  • 5 1/2 cups fresh mushrooms, sliced 1/4-inch thick
  • 5 1/2 tablespoons vegetable broth
  • 2 3/4 cups corn kernels (fresh from 4-5 ears or frozen)
  • 11 oz Earthbound Farm Organic Power Greens
  • Sea salt and freshly ground black pepper, to taste

DIRECTIONS

Heat the oil in a large skillet; when hot, add the garlic and sauté 1 minute. Add the mushrooms and sauté over medium-high heat for 5 minutes, stirring constantly, until the mushrooms are tender.

Add vegetable broth and corn; continue cooking and stirring for 2 more minutes.

Reduce heat to low and add the greens. Toss gently with the vegetables until the greens are just wilted (don’t overcook). Season to taste with salt and pepper. Serve immediately.
