Step Into Spring With Mollie’s Frittata

Made with savory herbs and julienned zucchinis, squash and peppers this dish is sure to be a brunch favorite!

Here’s how to make it…

INGREDIENTS

      • 3 Zucchinis,  3 Crookneck Squash, 1 Red and 1 Green Pepper (Julienne Cut)

      • 1 Cup of Onion 1/4” dice

      • 1/4 of 1 bunch of Parsley (Chopped)

      • 12 Eggs

      • 1 Cup of Cream

      • 2 Cups of Swiss, Mozzarella, Cheddar, and Jack cheese (Shredded)

      • 2 tablespoons Mollie’s Extra Virgin Olive Oil

      • 1/2 teaspoon Kosher salt

STEPS

Preheat oven to 350°F

Heat oil in a stir-fry pan and hot flash saute all vegetables for 3 mins.

Meanwhile whisk eggs, cream, parsley, and salt together.

Layer vegetables in bottom of a 9” x 13” pan and cover with cream and egg mixture. Sprinkle with cheese.

Bake until set (approx: 30 mins.) *Use knife test.
