Rainbow Cabbage Mason Jar Salad

2026 is the year of the Cabbage and we are so happy this delicious and versatile veg is finally having its moment!

This nutrient-rich leafy green needs to be in your weekly rotation, whether it’s as a beautiful Rainbow Mason Jar Salad, your next soup, kimchi, dumpling or as a classic side to corned beef! Because it can be fermented, grilled, shredded, stuffed, braised, and stir-fried, the options are truly endless.

Rainbow Cabbage Mason Jar Salad

Ingredients:

  • 1/4 Cup of Green Goddess Dressing
  • 1/3 Cup of Chickpeas
  • 1/2 Cup of Shredded Red Cabbage
  • 1/2 Cup of Shredded Green Cabbage
  • 1/3 Cup of Red Bell Pepper, Diced
  • 1/4 Cup of Carrots, Shaved
  • 1/4 Cup of Mint, Chopped
  • 32 oz Mason Jar or larger

Directions:

  1. For an extra fine shred on your cabbage cut the whole head of cabbage into wedges and then carefully shred on a mandoline.
  2. Layer in all of the ingredients into the mason jar, starting with the dressing as the bottom layer.
  3. Seal the jar and refrigerate until ready to eat. Store for up to 2-3 days.
  4. When you are ready to enjoy, remove the lid and empty into a bowl, toss and enjoy!
