This nutrient-rich leafy green needs to be in your weekly rotation, whether it’s as a beautiful Rainbow Mason Jar Salad, your next soup, kimchi, dumpling or as a classic side to corned beef! Because it can be fermented, grilled, shredded, stuffed, braised, and stir-fried, the options are truly endless.
Rainbow Cabbage Mason Jar Salad
Ingredients:
- 1/4 Cup of Green Goddess Dressing
- 1/3 Cup of Chickpeas
- 1/2 Cup of Shredded Red Cabbage
- 1/2 Cup of Shredded Green Cabbage
- 1/3 Cup of Red Bell Pepper, Diced
- 1/4 Cup of Carrots, Shaved
- 1/4 Cup of Mint, Chopped
- 32 oz Mason Jar or larger
Directions:
- For an extra fine shred on your cabbage cut the whole head of cabbage into wedges and then carefully shred on a mandoline.
- Layer in all of the ingredients into the mason jar, starting with the dressing as the bottom layer.
- Seal the jar and refrigerate until ready to eat. Store for up to 2-3 days.
- When you are ready to enjoy, remove the lid and empty into a bowl, toss and enjoy!
