California Pear & Blue Cheese Honey Tart

October is National Cheese Month, and we’re celebrating with a California Pear & Blue Cheese Honey Tart that brings the best of the season together.

This recipe features a nutty California Walnut crust, that layers sweet, ripe pears, aromatic thyme, creamy Bellwether Farms Crème Fraîche and rich Point Reyes Farmstead Original Blue Cheese (both made with Real California Milk).

A finishing touch of honey and toasted walnuts brings it all together in an elegant celebration of Fall and the love of great cheese!

California Pear & Blue Cheese Honey Tart

Ingredients

Crust:

  • 1 1/2 cups California Walnuts
  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 6 Tablespoons unsalted butter (cut into small pieces then chill in fridge until cold)

Filling:

  • 3 Tablespoons Bellwether Farms Crème Fraîche
  • 2 large pears, halved, cored, and sliced
  • 3.5 oz Point Reyes Farmstead Original Blue Cheese
  • 1 teaspoon freshly chopped thyme
  • Salt & pepper to taste
  • Chopped walnuts for garnish
  • Honey for garnish

Instructions

Crust: Place walnuts in a food processor and pulse until finely ground. Then add whole wheat flour, salt, cold butter cut in small pieces, and mix in the processor until the dough comes together. Wrap the dough in plastic wrap and refrigerate for one hour.

Using your fingertips, press the dough into a 9-inch pie dish. Flatten the bottom with the base of a glass. Freeze for about 30 minutes.

Preheat the oven to 375°F (190°C).

Filling: Carefully fold your chopped thyme into the crème fraîche, then spread an even layer on the bottom of the pie crust.

Sprinkle an even layer of blue cheese crumbles over the crème fraîche. Finally, delicately place your sliced pears on top, add the chopped walnuts and a drizzle of honey, and season with salt and pepper.

Bake for 12-15 minutes.

Let the pie rest for 5-15 minutes and serve warm or at room temperature.
