Place strips of bacon on a rack over a baking sheet (with sides). Using a pastry brush, paint one side of each bacon strip with maple syrup. Bake in a 375F oven for 10 minutes.

Turn bacon over and brush the other side with maple syrup. Continue baking until crisp, about 10-15 minutes. Serve hot and enjoy.

Whisk together 2 eggs with 2 tablespoons of water. Season with salt and pepper. Melt a pat of butter in a small skillet and pour in eggs. When eggs have thickened, sprinkle ham and cheese over eggs. Cook until desired doneness. Gently fold in half and turn onto a plate. Serve with fresh fruit and Maple Bacon.
