Recipe: Against The Grain Gourmet Gluten-Free Dressing

Savor traditional flavors sans gluten! If you’re planning a gluten-free Thanksgiving meal this year, try this recipe for Gluten-Free Dressing from Against the Grain Gourmet.

The recipe is based on the amount of stuffing required for a 12-14 lb turkey and can be easily doubled or tripled for larger birds. Alternatively, bake the dressing separately in a greased pan.

INGREDIENTS

  • 2 Against The Grain Gourmet Baguettes, sliced and lightly toasted*
  • 1 medium onion, finely chopped
  • 3 ribs celery, finely chopped
  • 1/2 stick butter
  • 1 large egg
  • Salt & pepper to taste

DIRECTIONS

Toast baguette slices for approximately 15-20 minutes at 250-300F, and dice in approximately 1/2” cubes.

Melt butter in frying pan; add chopped celery, onion, salt and pepper and saute for approximately 5 minutes. If you specifically want rosemary stuffing, add a tablespoon of fresh chopped rosemary to your sauteed vegetables.

Toss butter and vegetable mix with bread crumbs; add raw egg until evenly moistened.

Stuff turkey cavity and place in preheated oven (follow temperature directions on turkey packaging).

Bake uncovered for 1 hour. After 1 hour, cover breast with a small piece of muslin and baste as needed until done, pouring off juices as necessary. You don’t need to cover the exposed stuffing if you like the surface to be slightly crispy.

*Original Rolls or Original Baguettes will work just as well for this recipe.
