With fresh quality ingredients like our Mollie’s Roasted Applewood Smoked Bacon and Mollie Stone’s Organic California Premium Extra Virgin Olive Oil, this recipe is sure to be a crowd pleaser at your next backyard BBQ.
Ingredients
- 1 ½ pounds of Yukon Gold Potatoes, cut down to 1 inch pieces
- 8 ounces of Mollie’s Roasted Applewood Smoked Bacon cut into 1 inch pieces
- 2 tablespoons of Mollie Stone’s Organic California Premium Extra Virgin Olive Oil
- 2 tablespoons of White Wine Vinegar
- 2 teaspoons of Dijon mustard
- ¼ teaspoon of honey
- ¼ cup of fresh chopped parsley
- ¼ cup of fresh chopped dill
- 2 tablespoons of fresh chopped green onions
- Salt and Pepper to Taste
Instructions
- Boil potatoes and cook until tender, approximately 10-15 minutes.
- In a large bowl combine the olive oil, white wine vinegar, dijon mustard, sugar, fresh chopped herbs, and salt and pepper to taste.
- After removing the potatoes from the heat drain and then add them to the large bowl that contains your dressing and gently toss to coat.
- Cook bacon to preference. Top with bacon, serve and enjoy!
