Hatch peppers can be roasted over an open flame or under the broiler in an oven. The process typically takes about 8 minutes (less time for smaller peppers, more for larger).

Use long-handled tongs to hold the pepper over a medium flame, turning occasionally until evenly charred.

This is the authentic traditional method and is the most ideal way to roast Hatch. Heat the grill until hot. Using long-handled tongs, turn the peppers over the direct heat until they are blackened and blistered all over.

Preheat the broiler to high. Arrange the peppers in a single layer on a baking sheet and set under the broiler. Roast until blackened and blistered all over, turning occasionally.
