California Egg Sandwich

We think fresh eggs are an egg-specially great way to start the day!

CALIFORNIA EGG SANDWICH:

Serving Size: 4

Ingredients:

  • 4 Large Eggs
  • 4 Mollie’s Fresh Bagels (Sliced and Toasted)
  • 1 Package of BrightFresh Micro Green’s Micro Arugula
  • 2 California Avocados
  • Salt and Pepper to Taste

Directions:

  1. Prepare a small egg pan with cooking spray and set your burner to medium heat.
  2. Cooking 1 egg at a time, crack your egg directly into the pre-heated pan.
  3. Keep the pan on the heat until the egg white just begins to turn from clear to white.
  4. Remove pan from heat.
  5. Build your sandwich accordingly, by opening the toasted bagel, making a layer of Micro Arugula, gently sliding your finished egg over top, placing your avocado slices and then adding salt and pepper to taste.
  6. Enjoy!
