Yogurt Parfait

Looking for a delicious grab and go breakfast option? Look no further. This yogurt parfait is packed full of flavor and nutrition and is easy to enjoy on the go.

Ingredients:

  • 2 cups Real California plain yogurt
  • 1 1/2 cups California Walnuts
  • 4 cups mixed berries (if using strawberries, hull and halve them)
  • 1/4 cup honey

Instructions:

Assemble

  • Arrange about 1/3 of California Walnuts in 4 serving dishes, glasses, or jars.
  • Top with 1/3 of berries, 1/2 of yogurt, and 1/3 of honey.

Repeat

  • Make another layer of walnuts, berries, yogurt, and honey.

Complete

  • Top with remaining walnuts, berries, and honey and serve. Serves 4. Prep time: 10 minutes

Note: This recipe serves four and has a 10-minute prep time.

Banana Overnight Oats

Meal prep has never been easier, or tastier. Start your day with overnight oats.

Ingredients:

  • 3 ripe bananas, sliced
  • 2 cups old-fashioned oats
  • 1 tbsp ground cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 3/4 cup chopped California walnuts, divided
  • 1 tbsp maple syrup
  • 3 cups skim milk

Instructions:

Mash sliced bananas

  • In a large container with a lid, add sliced bananas.
  • Use a potato masher or a fork to mash the bananas until smooth.

Mix

  • Add oats, cinnamon, salt, vanilla, half of the chopped walnuts, maple syrup and milk to the bananas.
  • Combine thoroughly and refrigerate overnight.

Serve

  • Divide the oats into four serving dishes, such as mason jars or glass containers with lids.
  • Top each serving with remaining chopped walnuts before serving.

Note: The overnight oats will last up to 5 days in the fridge, though the oats will soften more the longer they sit.

Carrot Cake Reset Smoothie

A smoothie so good you’ll want to be a morning person. Wake up with a delicious drink.

Ingredients:

  • 3/4 cup Real California Yogurt
  • 1/4 cup Real California Milk
  • 1 cup finely grated carrot, loosely packed
  • 1/2 cup frozen banana slices
  • 1/4 cup toasted walnuts, finely chopped
  • 1/4 cup unsweetened shredded coconut
  • 2-4 chopped prunes, to taste
  • 1 teaspoon vanilla extract, optional
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions:

Mix and pulse

  • Add yogurt, carrots, banana, walnuts, coconut, prunes, vanilla extract (if using), cinnamon, ginger, nutmeg and salt to the jar of a blender.
  • Pulse on low until everything begins to come together.
  • Remove the lid and scrape down the sides of the jar with a silicone spatula.
  • Return the lid to the blender jar

Blend

  • Blend on high speed for about 1-2 minutes until a smooth, creamy texture is achieved.
  • If necessary, scrape down the sides of the jar again, and pulse until smooth.

Complete

  • Top with additional shredded coconut, chopped walnuts, or shredded carrots, if desired.

Note: To streamline whipping up the smoothies, measure out the dry ingredients, including the spices, and store them together in a small container or the jar of a smoothie attachment for your blender. Carrots can be grated in advance as well and refrigerated until ready to use.
