1) SIMPLE BRIOCHE FRENCH TOAST SKEWERS
Recipe from Brioche Pasquier
- 6 extra-large eggs
- 1 1/2 cups half & half
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon Kosher salt
- Pinch of nutmeg
- 1 large loaf sliced brioche bread
- Unsalted butter
- Suggested for serving: berries, sifted confectioners’ sugar, maple syrup, chocolate syrup
2) ORANGE ZEST BRIOCHE FRENCH TOAST

- 6 extra-large eggs
- 1 1/2 cups half & half
- 6 tablespoons fresh orange juice
- 1 teaspoon grated orange zest
- 1 oz Grand Marnier
- 1/2 teaspoon Kosher salt
- 1 large loaf brioche bread
- Unsalted butter
- Suggested for serving: sifted confectioners’ sugar, honey, orange zest
3) VANILLA ALMOND BRIOCHE FRENCH TOAST
Recipe from Brioche Pasquier
- 6 extra-large eggs
- 1 1/2 cups half & half
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/2 teaspoon Kosher salt
- 1 large loaf brioche bread
- Unsalted butter
- Suggested for serving: sliced almonds, blueberries, maple syrup
DIRECTIONS FOR ALL VARIATIONS
In a large shallow bowl, whisk together all ingredients except for the brioche bread and unsalted butter. Dip brioche slices in the egg mixture one at a time until well coated on both sides. Do not soak slices in egg batter, just coat completely on both sides.
Heat 2 tablespoons butter in a very large saute pan over medium-high heat. Add the coated brioche slices and cook for 2 to 3 minutes on each side, until nicely browned. Place the cooked French toast on a sheet pan and keep warm in the oven. Fry the remaining soaked bread slices, adding butter as needed, until it’s all cooked. Serve hot with toppings of choice.
Optional, but delicious! Slice cooked Brioche French Toast into 1-inch squares and skewer with fresh berries.
