Hodo’s tofu is delicious, but how is it made? We learned the process on our tour.

When Minh Tsai moved to the United States from Vietnam, he went on a mission to find the same fresh soymilk, tofu, and yuba that he had enjoyed in his native country. He became frustrated when his attempts proved unsuccessful, and decided to do something about it. He founded Hodo Soy Beanery in Oakland in 2004, and fulfilled his mission by providing artisan soybean products to the Bay Area. Hodo means “good bean” in Chinese, and that is the basis of the beanery’s success. The process begins with whole, certified organic, non-GMO, U.S. grown soybeans selected by Tsai for the right protein and fat content. Those soybeans are then transformed into soymilk, tofu, and even yuba.

They are the only organic manufacturer of yuba (tofu skin), which is the noodle-like sheet that forms at the top of heated soymilk.
Hodo also specializes in flavorful prepared foods, such as Spicy Yuba Noodles, Thai Curry Tofu Nuggets, and even a tofu egg salad made with their signature vegan soy mayo. Hodo Soy Beanery began in farmers’ markets, and is now a favorite at your local Mollie Stone’s.
