3 cups diced mango, diced 1 cup tomatoes, diced 1 teaspoon jalapeños, minced 1 clove of garlic, minced 1/4 cup shallots (1/8-inch dice) 1 large avocado, diced 1/4 cup lime juice Small pinch of sea salt (or to taste)

Easy Lemon Tart


Lemon Filling

4 large eggs 1/3 cup freshly squeezed lemon juice 1 1/2  cups granulated sugar (or organic sugar) 1 tablespoon freshly grated lemon zest 1 tablespoon freshly grated orange zest 1/3 cup butter, melted powdered sugar, for topping (once the tart is cooled)

Flaky Shortbread Crust

2 cups all-purpose flour 1/2 cup powdered sugar 3/4 cup chilled butter, cut into cubes
